Behold! The most beautiful damn smoothie bowl of all! I call this the Bali bowl because it's tropical as all hell and this is where the recipe for this smoothie originated from. Now, I'm sure you're wondering how in the hell is it magenta?! It's because I use Dragon Fruit (Pitaya) for the base! ....what is a dragon fruit...?
This is a Dragon Fruit! They are super strange looking and (I think) the coolest fruits ever! If you are based on the west side of the USA or in Southeast Asia, Central America, or Mexico you won't have a problem finding these, and they're probably cheap.
Dragon fruit has a very low glycemic index, meaning when you eat it, it does not cause a spike in your glucose levels. Basically, the fruit has a very mild sweetness. Kind of reminds me of a kiwi, but less acidic. Which is also good for your PH.
It's packed with tons of potassium and antioxidants as well!
There are three different types of Dragon Fruit. Red, White, and Yellow flesh. The red fruit is what gives the smoothie amazing color.

Finding the fruit:
This was the biggest pain in the ass of all. Having this fruit so available to me in Bali, coming home it was almost impossible to find in Michigan. Luckily, we have a huge Asian food market here that sells tropical fruit, but it comes at a price. I purchased 5 fruits and was able to cut them up and put them in freezer bags for future use. I believe that some stores on the west side of the US carry it already frozen, but not on the east side.
Scoop it out, chop it up, save it for later.
Creating the smoothie:
In a blender place
4-5 pieces of Dragon Fruit
1/2 frozen banana slice
1/2 cup canned coconut milk (I use a brand that is straight from Thailand)
1 tbsp Maca powder
a little bit of water
*The reason I use coconut milk instead of almond, or soy, etc. is because it adds a much more tropical smooth taste to the smoothie*
Choose whatever toppings you want!
