Cauliflower fried rice is one of my favorite Asian inspired veggie dished to make!
This recipe is easy and super nutritious as well.
I'm personally really terrible at measuring things precisely, so just eyeball it!
PREP: 10 mins.
Take 1 cauliflower head and chop the florets into small sections.
I like to put the pieces into a food processor and pulse it a few times until you get a rice like consistency.
If you don't own a food processor, that's ok! You can use a cheese grater or a knife to chop the cauliflower up until it's a super fine consistency.
STEP 2: Prepare all veggies you want to put into your fried "rice". I used peas, carrots, yellow bell pepper, red onion, and tofu for my protein.
Let's get cookin: 10 mins.
Place a medium non-stick pan on medium heat and add 2 tbs of sesame oil (toasted or not)
1 TBS of minced garlic goes into the pan next
1/2 chopped red onion and let simmer until they begin to caramelize.
NEXT! Add in you cauliflower rice with a little extra oil and 1 TBS of soy sauce.
Stirr until cauliflower begins to brown and then add all your veggies/ tofu/ or scramble eggs with it.
Whatever your heart desires, but I like to keep my meals meat free!
taste test to make sure you have enough flavor! If you want to add a kick of spice, add in some chili flakes when stirring the cauliflower or put some sriracha on the finished product!
