Vegan Spelt Pancakes!

These pancakes are my favorite to make on a Saturday or Sunday morning! I always thought that you needed egg as a binder for baked goods, when it turns out you actually don't. I'm not a vegan but making these vegan gives me one less step to making the batter and plus, it's good for the planet.


(Makes one serving)

  • 1/2 cup of spelt flour- I use Bob's Red Mills

  • 1/8th tsp baking powder

  • 1/2 TBSP of coconut sugar (low-glycemic, so less sugar spikes)

Add enough water, milk, or any milk alternative (I use almond) until you reach your desired consistency with the batter

You can add a tiny splash of lemon juice as well and this will make your pancakes a little extra fluffy!

I always mix fresh blueberries into my batter and if I'm feeling super fun I'll add dark chocolate chips too ;)

Top with whatever! I usually do almond butter and more fruit.
